From Whispering Pines Tea Company

If I were the Mad Hatter, what tea would I serve to the Jabberwocky? Perhaps the uffish beast would enjoy something chocolaty? Maybe a finish of eucalyptus would soothe his frumious mind! Mind you, with teeth like snicker-snack’s there would be no turning back so it must be pleasing to the eyes! Purple, green, brown between, so pretty his eyes will gyre! So through the tulgey forest I shall brew and pour us a beautiful cup of the most beautimus tea that he will ever see. I must say – the slithy toves will run away, the jubjub bird will feel okay, and at brillig under the tumtum tree, the Jabber and me will sip some tea! He will chortle and the manxome beast will burble out that he is pleased and the days of worrying that he will eat you will be far away – oh frabjous day!

No more mimsy cups of tea! The Jabberwocky is strong and smooth with a full mouth of wildflower nectar and honey drizzled on a fresh french baguette with a light hint of salt. The middle of the sip hints at creamy chocolate and plum dipped in luscious silky caramel. The finish is strong of camphor and eucalyptus and leaves your mouth feeling fresh and wanting more! The beautiful wet leaves are light brown, mottled with green and purple, and emit the aroma of honey, camphor, and a cool mineral freshness reminiscent of standing at the edge of a raging river. Enjoy the strong qi of this smooth and silky brew anytime of the day, and don’t worry about over-brewing…we knew that the Jabberwocky didn’t like bitterness or astringency, so you won’t find either in this cup!

Ingredients: Fujian Black Tea, Ailaoshan Black Tea, Wild Arbor Yunnan Black Tea

Notes: Honey, Nectar, Salted Caramel, Camphor, Eucalyptus, Cocoa, Stonefruit, French Bread

I tried to review this tea twice the last two days and the dashboard was frozen. :( I am doing the review from memory now because last night was a sipdown.

Dry: Long dark twists of tea leaves with some shorter pieces mixed in. Appears to be a blend of at least two that are light and airy and thick and furled. The leaf did not appear purple to me, but was rich and dark in appearance and in scent with dark chocolate and honey-sweet wisps. I am a HUGE Alice in Wonderland fan, so I had to have this tea as soon as I saw its name.

Steeped: Rich and dark clear liquor, but the bag said to use 1 TBSP for 1 cup of water. That uses a TON of tea for a 24oz teapot considering that most of the others average 1/2 to 1 TSP per cup. I was wondering if it meant to say teaspoon after all because it never came out quite right with the recommended measurement when the temperature is exactly 205 and the time is exactly 3 minutes. All of my other teas from this vendor have been spot-on though.

Taste: Honestly, I think overleafed is the best description unfortunately. Initially there is a burst of dark chocolate, a hint of floral, wood, and malt. I can tell there is a lot of potential, but there is a touch of a bitter bite because I think there is just too much dry leaf in the water. The best cup I made was when I used slightly less and was able to differentiate the above notes. I think I could have liked this one if I had more than an ounce to play with, but its okay because I still love basically every other tea from WP I’ve tried. :)

I recently changed my recommended serving of this to 1/2tbsp. :-( Hopefully you get the chance to try it again with the new parameters!

No sad faces- I love your teas! I think 1/2 tbsp will be a lot better. :)

The lovely TheTeaFairy gave me a list of Oolongs that she recommended for my upcoming exploration of Oolongs. One of them was a Whispering Pines tea, and I have wanted to try Brandon’s teas out for awhile, as the folks I follow here seem to universally enjoy them . So I ordered an ounce each of 6, including the Oolong. This, obviously, is not a review of the oolong, as I’m going to wait until I have ordered the other oolongs on the list to do a series of tastings of them. Can I say oolong one more time? Oolong.

Anyway, since I am waiting, I wanted to try out one of the other 5 teas, and I choose this one to start with. I ripped open the envelope and the scent is lovely. Tried to scoop up a teascoop of leaves, and they were not cooperating, but the couple I did get were blue-black and nice looking. Tried again, and this time I got a nice scoopful and a very bedraggled… feather? Oh my. It was quite beat up and barely recognizable as such, but definitely was one as I peered at it under a magnifying glass.

I always did picture the Jabberwocky as a partially feathered creature…

The feather looks like it got roasted along with the tea, so I think it’s been in there awhile. Pretty sure that any mites that might have been able to hitch a ride would have passed away through roasting and lack of lunch by now, I’m going to pretend all is well and assume it probably will be. I am far less freaked out by this than the human hair I found in a mini-tuocha of pu-erh once. Which, I don’t know what that says about my own mental foibles… :D

Okay, it’s all brewed up, I’ve frothed my sweetener and half&half, and added the tea. The liquor was a nice medium brown. My cup tastes malty and I am quite enjoying it. It’s not a heavy malt, but it’s there, and I don’t notice any bird-like aftertaste. We will see if I start sprouting feathers later today ;)

There was a small sticker holding the “thanks for your order” note to the box, and I quite liked it. It’s from e.e. cummings: “Your head is a living forest full of songbirds.”
giggle The quote seems quite fitting now!

So sorry that you found a feather in your tea! Unfortunately, this is a very common problem, even (especially) for very high-end teas. Because of the time consuming hands-on processing that goes into the tea itself, it’s nearly impossible to produce tea without foreign matter getting into it. I do try to inspect all of the teas thoroughly after arrival at headquarters as well as during the blending process, but as I’m sure you can understand, you can’t always get ‘em all! :-)

I hope that it won’t affect your experience with Whispering Pines! I can assure you that because of the high heat used in the processing of the tea, there is no need to worry of bacteria or anything harmful in the tea itself.

I’m glad you enjoyed this and look forward to more of your tasting notes! :-)

Skulleigh

Well, I haven’t started clucking (anymore than usual), and I’m not sprouting any feathers, so I think I am fine! :D No worries!

I’m actually brewing up the packet of Second Breakfast which you sent as a sample right now. I think that’s the best name for a tea ever!

Whispering Pines Tea Company

Well I’m glad you’re okay! But honestly, would you have been sad if you gained the ability to fly? ;-)

I’m glad you’re enjoying them!

Skulleigh

I would not be sad at all! Hehe

First off, I really like that Brenden separated this into individual servings, it makes it so easy. And I love that they have quotes on them! Cute.

Leaves are smallish and very dark, and they’re long and twisty. Dry scent is quite sweet with a lot of malt and some fruitiness. The aroma is very fruity with a lovely burnt sugar scent. There’s also some dark bread with honey in there too.

I think the tablespoon of tea is a bit much for 8 ounces, but it didn’t come out bitter. This is very strong malt with some dark bread and molasses. I can also taste a dark fruitiness underneath that is very concentrated and reminds me of raisins without the sweetness. The end of the sip mellows out a little bit more and goes more into bready territory, which is lovely.

Overall, this tea is tasty but I don’t feel the need to order it because I already have two of the three teas it’s composed of. :)

I got this in the post from Cheri today. And it was selected by the folks in the chat room.

This is a nice blend of two teas I really enjoy, and one type I really like. Most Yunnan blacks i tried give me notes of yams, and I get a bit of that in the nose. There are also some scents of chocolate, honey, fresh baked bread, plums, and general sweetness. The flavour is all the things I like about black teas (and the WP ones I tried)… cocoa, honey, bread, and a bit of yams. Overall, it tastes like fabulous.

I drank this earlier this week, it was one of the teas I took with me to work on Wednesday. I drank it again this morning while I was making one of my awesome breakfasts: homemade sausage patties (no offense to the vegetarians, but it’s amazing what you can do with a lb of locally raised ground pork & some spices), asparagus & eggs. Tony was gloating over his package of english muffins, which always irritates me, so I made an almond flour coffee cup muffin in the microwave (one of the rare things I actually use that evil machine for), cut it in half & put it in the toaster, & it was tasty with apricot jelly.
I have nothing really to say about this tea except that it is good…very good. My lack of comments is not due to the tea, it’s just that I drank it a few hours ago.

MzPriss

I had Jabber for breakfast a big fat 16 oz cup and it was soooo good.

Shadowfall

So jealous. I really need to pick some of this up soon, along with a few others….ugh. My order is gonna be crazy. Lol!
Coffee cup muffin? I’ve heard of (but have never gotten around to making) mug (cup)cakes, so is the muffing the same sort of thing?

Veronica

After reading your note I’m thinking Ill be having breakfast for dinner tonight. Yum!

We don’t own a microwave, and there’s only once or twice a year that I miss having it (usually to speed up the melting of butter and chocolate during Christmas and Easter baking).

Terri HarpLady

I have a super tiny microwave at my house that I never use, but the other people who live there use it sometimes. Tony has a medium size one, & he uses it to reheat things. I only use it to make this muffin once in awhile. It’s a basic unsweet recipe, which is nicely enhanced with cinnamon or lemon peel or cocoa powder & a little sweetening.

So excited to finally get to try this.
First steep is light and sweet, honey, nectar, bread, and caramel, silky smooth mouth feel.

The second steep starts to get a bit darker. Honey, bread, caramel, but now there’s also raisins and a touch of cocoa hiding at the edges. I accidentally forgot this one and left it steeping for 10 minutes with no bitterness or astringency.

Wow honey. The third steep is like pure honey and nectar. I’m at my dad’s and using his microwave to heat the water so it’s probably only ~185F. But it’s still delicious.

Ooooh now I’m excited! :D So many good teas in here that I want to try.

Mandy

It’s like Christmas! I think I wept while pulling the teas out.

Cameron B.

Can’t wait… Don’t steal all the goods! :P

KiwiDelight

One of things I’m most looking forward to when I receive the box is getting a change to try Whispering Pines teas.

Cameron B.

Kiwi, I’ll be sure to add some from my stash too. I have several from them. :)

Cheri

KiwiDelight, is there something from them you’re really looking for? I am sending a package out to you already. I could include some of those that I have….

KiwiDelight

Oh no Cameron and Cheri, you guys don’t have to do that. I’m more than ok with what’ll be in the box ^^;

Cameron B.

Kiwi, well I assume we’re supposed to replace the tea we drink anyway, so I might as well add something that you’ll like to try. :D

KiwiDelight

That would be great! :D Whispering Pines is on my “must buy from” list and my hiatus is such a painnnnnnnn

Lariel of Lórien

I really want to try this one.

Mandy

Kiwi-The only WP in the box is this one. But I think between Cheri Cameron and I we should be able to contribute a nice selection for you (:

Cheri

I’m next, so if there’s something you like to see in the box that’s in my cupboard, let me know!

Cameron B.

Cheri, I wouldn’t mind trying Cocoa Amore, but it’s a pretty expensive tea so I understand if you don’t want to spare it. :P

Cheri

I’ll slip a little bit in. One ounce of this one doesn’t seem to go as far as I wish it did…..

Cameron B.

Don’t worry about it then! My ounce of Golden Orchid is the same way… Where did it go? XD

KiwiDelight

If you guys have everything WP has that would be perfect.

Joking aside, y’all are great :P <3

Oh, the Hatter came up with a good one here….
Being one who likes to make their premium teas last as long as possible, I made my cup with the full tablespoon of leaves, but also a run through with just over a teaspoon. Both ways made an absolutely magical cup of tea (I didn’t even have to fall down the rabbit hole…. although, on most days, I feel as if I already have…).
Brown sugar, bread crust (that really crusty French kind…), cocoa, and the light notes of stonefruit… it’s all there!
With both amounts of leaves, I steeped at least 3 times and loved every bit of it.
While I’m sure the flavours really popped with the full tablespoon, for me, it’s good to know that I can tone back the leaf if I want to make it stretch.

Utterly delightful in every way. :)

boychik

Why oh why you made it sound so delicious. I’m running out of space…;-)

DeliriumsFrogs

Oooh! I’ll send you some, if you’d like!! :)

Cheri

This is yummy.

boychik

Thank you. I would try. Keep for me 1-2tsp please. I didn’t come back home yet;)

DeliriumsFrogs

I’ll set some aside for you! I hope your Summer is going great—I keep thinking about how beautiful it must be at your summer home!

boychik

It’s nice, a little chilly. It’s 61F and low 50’s at night. Heavy comforter and pj. And lots of hot chocolate for kids. Tea for me;)

DeliriumsFrogs

I’m weird, and actually like the cooler weather, so comfy blankets, hot chocolate, and tea sound so inviting. :)

Cheri

I like cooler weather over HOT weather all the time. I can put on more blankies. When it gets too hot, there hits a point when I can’t take anything more off.

DeliriumsFrogs

Cheri, I am totally with you. You can fix being cold, you know, unless you’re stranded out in the snow somewhere… but you can only cool down so much when it’s hot.
It felt like Fall here the other day, and I knew I was about the only person around here who actually liked it.
Humid weather makes me melt…. and then I can’t drink tea! lol

boychik

I’m dreading the time I have to come back. It’s hot and humid in Brooklyn. I like cooler weather, but common I would prefer 70 in August, not 58.

Dexter

(Agreed – it’s been TOO HOT to drink tea the last few days here)

Whispering Pines Tea Company

Two days ago it was 64F, overcast, and breezy. I did nothing but drink tea outside all day. It was perfect. Today it was 80F…way too hot for me…but I also LOVE humidity over dry heat, so I have no real issue with the weather :P

I’ve fallen way behind on posting tasting notes, so I’ll dash off a few now, then I’m out of commission through the weekend while I ride the Pan-Mass Challenge (almost 200 miles in two days with all of the money raised going to the Dana-Farber Cancer Institute – count me in!).

I’d heard so much about this one from other Steepsters that I had to try it, and I’m not sorry I did. The first steep gave me a lovely toastiness and breadiness in the foreground with a kind of minty fresh sense when I inhaled after a sip. The dark caramel color was particularly attractive. The leaves were more unfurled at the second steep, which is what probably gave me the richer mouth feel and the still-toasty flavor. In my third and final steep (of this round), the flavors are starting to fade a bit, but it’s still roasty-toasty and fun. Jabberwocky is a keeper for sure.

This week, I decided to do a gongfu session again after a night out. I’m liking this a lot. It may be a ritual for me. It’s the one day a week that I’m not exhausted from a cumulative sleep debt and I also don’t have to be up at a particular time the next day. So I can drink tea from 2-5am if I want to :-) The perks of adulthood!

The Jabberwocky was a perfect choice for my late night steeping. I’m enjoying it while listening to Maroon 5’s “Hands all over” album, which was a gift from my dear friend Cordelia. Both the Jabberwocky and Adam Levine have a little bit of that bad boy appeal (heeeyyyy boyfriends haha) I brewed this 15/15/30/40/60/90 sec.

Steep 1: This steep is all about that bready base taste. It’s also buttery and salty with lovely caramel.

Steep 2: The chocolate is here! Cue the dancing munchkins from Wizard of Oz. It weaves between the bready, caramel-y, salty, buttery goodness that was already rocking my socks off and takes it to a whole new level!

Steep 3: The bread retreats a bit, but the chocolate and caramel step up to fill that void. Oh, ok, if it must be that way I suppose I’ll survive :-P

Steep 4: The cream finally shows up! Oh hey buddy, good of you to drop by. This steep is smooooooooth and sweet with a wonderful amalgam of chocolate, caramel, bread, butter, and cream with a light sweetness to the finish. I’ve noticed that I tend to be a 4th steep kind of girl, at least with WP teas

Steep 5: It starts tapering off here. There’s still a breadiness present, paired with a light sweetness and a cooling effect at the end of the sip.

Steep 6: The tea is played out at this point. But I’m still gonna drink this steep :). This steep is just lightly sweet and a little bit cooling. Like a sherbet at the end of a rich meal.

I do love this tea so. It’s top 5 for sure!

MzPriss

Awesome note!

TheTeaFairy

Lovely! And yo, Wizard of Oz Munchkins!

gmathis

I need to find me some munchkin tea!

mj

Thanks MzPriss and TTF :-)

gmathis, have you tried the jabberwocky? Maybe it’s your munchkin tea too!

Clint

I’m always interested to see Whispering Pines reviews. I have just begun exploring their teas, and so far I am absolutely loving it! I’ll have to give this one a shot.

TeaLady441

How much was in each steep? 2oz? more?

mj

Yes, you must try this one Clint!

Cavo, my gongfu holds about 150mL for each steep. I used 3g of leaf at about 205F.

Somehow this wasn’t listed as being in my cupboard even though I distinctly remember adding it.

I really like this tea.

I’m not sure when my tastes expanded like this, but they sure have.

And I needed a higher energy tea today for sure. There’s a lot going on today.

I have friends coming in from out of town soon. They were supposed to be driving but their car broke down part way into their journey. They instead took the car in for service and booked plane tickets. They’ll be here in less than two hours. I’m excited!

After that, we’re heading across the Mitten to meet up with other friends from all over the country. It should be a fantastic couple of days.
