From Soocha Tea

This second flush Korean green tea from Jiri Mountain in Hadong is made entirely by hand and contains young buds and barely opened young leaves. Sejak is also called Jaksul meaning “sparrow’s tongue” due to its size and shape, and picked from mid April to late April.

It’s full of the pleasant flavours of roasted nuts and steamed milk with tender fresh vegetal notes. Unlike steamed green teas, this Sejak gains flavours from pan-firing and final roasting methods that have been passed down for generations.

Our Sejak is grown and processed by a certified organic farm(USDA, EU).

Awards: 2nd place in the Green Tea category at the Toronto Tea Festival 2020

Origin: Hadong, South Korea

Harvest: Mid April – Late April, 2019

Steeping Recommendation:

3g | 240ml | 70ºC | 2min

For the second infusion, increase the steeping time to 2.5 minutes.

I was asked a few days ago to share a photo of some green teaware by my tea friend Kate on instagram – sorry that it took a few days, but here’s a beautiful pink and pistachio teacup that I adore:

This was also a great excuse to try this Korean green tea that she so kindly included as a gift with my last order!! As you can see, I drank it a bit more Grandpa Style in the cup this afternoon; I really enjoyed this one a lot! Way more than I expected to; actually – I’m not really a big green tea drinker. It was very fresh and sweet though, with lovely nutty chestnut notes! Thank you for the kind gift!
