From Mountain Stream Teas

Our Spring 2021 return to this garden found this tea had not been sold out! We happily bought what they had left and look forward to many more teas from this garden.

This wonderful tea was found following a series of minor misfortunes, missteps, and screaming matches on a recent sourcing trip. Through a circuitous series of events, we finally wound up on the front step of the former Mayor of this region at 6pm as the sun was going down. We were offered this tea, followed by an amazingly simple supper. It made the day all worth it, and we look forward to working closely with this farm over the coming years.

Strong, caramel sweet and fruity this tea is a great example of what agrochemical-free agriculture can do for a tea grown in a great region. It is round and complex, with a lingering sweet aftertaste that can’t be beat at this price point. A great example of the Alishan terroir!

Cultivar: Jinxuan

Oxidization: 25%, Middle/Light Electric Roast

Season: April 8th, 2020

Method: Hand picked, processed on site, small batch

Region: Alishan, Chaiyi County

Recommend Brewing Style:

Gong Fu Style: 3-5g per 100ml, ~95C(205f) water, 30, 45, 60 then add 5-10 seconds steeps in gaiwan. Lasts 4-5 steeps.

Western Style: 3g per 100ml, ~95C(205f) water for 2 minutes. Lasts 2-3 steeps

Well, this is tasty! Another sample in yet another recent order! The light roasty-ness is really lovely here with a prominent pastry sweetness. I can’t remember much else except that the first steep surprised me in the best way.

The second steep had that cardboard-esque flavour peeking through that I find in roasted oolongs.

Sipdown 8-2022

Found a sample of this in my sample box. Yay sipdowns! Super roasty, with a bit of a charcoal note that lingers. More sweet and caramel than I would have predicted, but the roastiness is still the focal point. A bit vegetal in the aftertaste- like roasted artichoke.

Sweet caramel-floral top notes underpinned by a supple, gentle umami along the lines of that understated seaweed-like vibe I find in some Taiwanese roasted oolong. Apricot finish and aftertaste which is in later bowls augmented by a minty-fresh throatiness. Well executed roast highlights the cream-turned-caramel notes of a roasted Jin Xuan. Can be a little drying at times (never to detriment), but the saliva-thickening character amplifies the caramel impression. Great bowl tea that handles boiling water with ease and has above average longevity when prepared in this manner. Soothing and just overall pleasant. Leaves are healthy and well cared for <3
