From Mountain Stream Teas

A Taiwanese aged white tea cake? Of course! Made from the 2019 spring pick of our best selling Sanxia White Tea, these teas cakes have been aging in a house right beside the fields in which they were picked for the last couple years.

The flavor of these older leaves is much darker and richer than their younger sibling white teas. Flavors of brown sugar and ripe fruit are dominant compared to the younger Sanxia White Tea’s white sugar sweetness and florals. Pressed in this way, these cakes are meant to be aged even more and we can’t wait to taste them as they develop over the years.

Produced at a partner farm only 20 minutes from downtown Taipei in one of the oldest tea growing areas of Taiwan, the tea is made in the traditional way by a tea master in his 80s. Each leaf is plucked by hand (no finger blades are even used!) and each batch of tea is tiny. This style of tea production is extremely rare and we are happy to support farmers still making tea in this old, delicate style.

Produced at the same garden as our Sanxia Black and Sanxia Green Teas.

Whew, look at that beautiful picture. My piece of cake was admittedly a little darker and not quite so stunning.

Dried leaf straight up smells like apple. Drank the rinse; light fruit tree scent. Took a while to open up, even after I reached in and broke up the chunk.

Much more mellow overall than it’s un-aged compatriot. Apple butter, vanilla, light malt, lychee.

Wish I’d thrown the whole 10g into this 150ml instead of stopping at 7g, as it’s delicate to the point of ghosty. I long-steeped the remaining crumbs and then did just that. Maverick white tea loosey-goosey shenanigans up in here.

Alas… rather than progressing further into sweet, it turned a corner to malty tannin and I lost interest.
