Ummon is the highest class matcha of our regular lineup. Its powerful umami, deep emerald green color, and sweet aroma are a treat to be savored.

TASTE NOTES
Ummon is our richest, most full-forced matcha blend from our year-round selection. Its aroma is sweet and lush like a misty evergreen forest, and its taste is full of powerful umami and sweetness. We recommended trying this matcha as koicha to experience the full depth and nuances of its character. As usucha, Ummon is aromatic, with a long, beautiful finish. For matcha lattes, we usually recommend a medium-to-light category matcha with more astringency, but some will choose Ummon, for its brilliant color and its full-body umami. In essence, this is a tea for people who truly love matcha.

Ummon-no-mukashi is the highest quality matcha by Ippodo.

To appreciate its flavor and aroma to the full, Ippodo recommends to prepare this tea as a thicker koicha.

It tastes best when served with sweets.

- Beautiful matcha, in appearance and quality and color.
- Foams easily and easy to sift.
- Deeply strong green aroma.
- Could be but not recommended as a daily matcha.
- Perfect to have some sweets after to take away the bitterness. (I have a chocolate covered cream and caramel I like to take afterwards.)

Another elegant matcha by Ippodo, it has the characteristics of the great elements you can expect in high quality. Ummon-no-mukashi is intensely richer, has more flavor packed with complexity, and is so much less bitter. There is more caffeine punch, definitely strong this one!

As for me, I love the creaminess and foam, the color, and fragrance. If your tastes goes more towards serious intense green and hints of bitter, then this is highly recommended.

Matcha blends have so much nuance that go into them, and everyone’s got a different palate. However, for the price, I didn’t think this was much to write home about. It’s not as clean and bright as their Shoin, or as good a value as their Horai. I’ve kept one serving for the next big matcha comparison, but I’ll be surprised if I keep this one in the house going forward.

I’ve tried Ippodo’s Top tier matcha. (not in the traditional way though) it was lovely! nice amount of sweetness/bitterness. nice amount of Umami and grassy taste.
i should buy more to try the traditional way and koicha way.
until then i will not rate this tea :)
