From Design a Tea

Darjeelings are often called the “Champagne of Tea”, grown in altitudes of 6000 feet have a delicate aroma. Darjeelings have a very limited harvest season (usually only twice a year – 1st and 2nd Flush) which accounts for its “higher price” as a tea.

I’m not usually a fan of black tea, and the first time I fixed this I overbrewed it, which didn’t help.

However, with a lower temperature and shorter steep time, this is a truly beautiful tea. The aroma is pure tea leaf, and the flavor is mild, smooth, and pure. Best of all, it has no harsh aftertaste.
