Length of infusion: 3 mins 30 seconds
Water temperature: 90°C

Dry leaves
Aspect: Small leaves and broken with few buds
Colours: A mixture of black and dark green leaves with a few that are more loosely rolled
Scents: A fragrant bouquet : floral, dried fruit, honey, very spicy and vanilla notes

Brewed leaves (Infusion)
Colours: Green dark green, coppery, brown
Scents: Plant, herb and floral (orange blossom) notes to start, combined with sweet fruit notes (yellow fruit)

Liquor
Colour: Clear, gleaming orange liquor
Texture: Supple to start, becoming powdery at the back of the mouth, giving this a wonderful length
Flavour: Slightly sweet
Aromas: Almond and sweet, vanilla notes, combined with floral fragnances, developing planty, herbal notes (camphor, rosemary, thyme)
Aromatic profile and length in the mouth: Long planty notes (herbs), liquorice (artichoke) and a few floral rose notes, adding a mild sweetness

Our verdict: This is our first tea from the only tea plantation in Sikkim – Temi. This autumn flush black tea from Temi is slightly sweet and has a wonderful length in the mouth. As Sikkim belongs to same mountain ranges as Darjeeling, this tea has some similarity with Darjeeling but a distinct Sikkimese character. It is also known as Monk’s Tea. A must try for Darjeeling lovers
