How to make: rule of thumb – 3-5g for an 8-ounce mug; 95-100°C (203-212°F); 1-2 minutes for the first infusion and adjust the time for later infusions.

Diana is happy to introduce this special Tie Guan Yin which she found during her visiting a tea pal Meixia, whose family owns the organic tea estates in An Xi and runs the business for over ten years. Different from most of the Tie Guan Yin in the market, it is semi-handmade in natural settings instead of air-con ones. Having gone through manual “rocking” (摇青) and other procedures, the tea leaves are naturally curly in contrast to the common round shape curled by machines. It allows post-fermantation. Therefore, a few local people who prefer the “taste of time” preserve the newly-produced tea in the cellars and drink it some time lat
