Lately my first cup of the day has been Sultan’s Jewel, a new addition to our tea menu. It is a Venture Estates Ceylon (Organic, Fair Trade, Bio-Dynamic) blended with whole and crushed cardamom pods. The idea came from one of our clients who is French and her husband is Persian. They like their tea thick, astringent and flavorful. I created the blend so it could steep for 10 minutes, which is what they are used to. For me, two to three minutes is enf to release the flavor of the leaf and the cardamom but not get too astringent for my taste. I find the cardamom a perfect compliment to my morning breakfast.
