I started making this and then my boyfriend was like, want to go to Starbucks? So I let this steep while we went…and now I have a cold coffee drink and hot tea.

This wins out. I’m not getting too much chocolate, but this definitely tastes like the graham crackers and marshmallows.

I am of course a chocoholic so I’ll just add more cacao nibs since I have them to see if that helps. Of course I also wasn’t really paying attention when I added the tea to the steeper so maybe I managed to unknowingly scoop out a teaspoon with little cacao nibs.

But even without chocolate this is so good. How does it taste so much like graham crackers? It’s definitely not just the cinnamon that’s doing it! The marshmallow root is interesting with the cinnamon, and it also makes this really sweet. I am loving the slightly smoked pine flavor at the end of the sip too.

Next time, more cacao! (Is there such a thing as enough though?)

The marshmallow root finishes up the sweetness of the graham cracker, too. See, this one is tough because it’s already almost 50% cocoa nibs by weight. I COULD cut down everything else in the blend and up the cocoa, but it might minimize the other flavors too much. Don’t want to add in real chocolate either — I’d like to keep this unprocessed and vegan :)

Yeah, I bought some about a month ago out of curiosity and never realized just how much they really aren’t like say, chocolate chips. Steeping them helps a lot, so I could always add more to the cup…after it’s steeped though, because eating them after they’ve sat in tea is the best way to eat them.

:) I do enjoy nibbling on a few of them every once in a while. Put some through my coffee blender one day too…thought it’d grind like the coffee beans. NOPE! Jammed up my blender and spent the rest of the day eating coffee-ground-covered-100%-cocoa chocolate paste off of toothpicks. They crush and creamate pretty easily. Yummy though :) I’ve had fun with the s’mores blend by steeping it for a good hour and sipping from the cup without straining anything. At the end you’ve got nice cinnamon bits and cocoa nibs to chew on :)
