Thoughts about Japanese Green Tea

Hi guys, I would like to know of your opinions about Japanese Green tea and how you guys feel about its taste. I personally find Japanese green tea rather different from other types of tea. In terms of taste, it is not very sweet as compared to some other tea but rather at times, it can taste savoury because of the Umami. It feels rather healthy to drink yet it can be a little more astringent. Because of the difference from mainstream tea nowadays, it seems that Japanese green tea is less appreciated and it is rather hard to find quality Sencha outside of Japan. What do you feel about the tea?

I like Japanese tea very much. Japanese green tea makes a good partner with sweets or with items like sushi. It can also have a large amount of umami on it’s own, or subsequent brews can be quite mild. Icing sencha brings out it’s unique taste, as well.

Knowing how to properly brew sencha and other types will increase your enjoyment of them.

I actually went to Japan a couple times now. They definitely brew their tea stronger than I’m used to, but the nice thing about tea is that you can brew it how you like. For instance, I generally use less tea then recommended.

I love the umami and grassiness of the greens. However, Japanese greens have a much higher caffeine content that Chinese greens so I don’t drink them quite as much.

Japanese is my favorite kind of green tea. However it’s less forgiving than Chinese greens and can quickly become astringent if you don’t pay attention to water temperature and steep time.

Try to keep your steeping time under 1 minute and drop the temperature a little to bring out more of the sweetness.
