The aroma of the dry leaf was slightly fruity and smoky.

The brewing leaves had aromas of sweet smokey salmon and vegetal.

The brewed tea has a very thick mouthfeel. There is a very strong characteristic white tea flavour with the smokey salmon note blooming into the aftertaste. I find it quite unique to have a white tea with a strong savoury note. Very faint sweetness with some sawdust woody notes.

A bit too bitter for my tastes. I may try to play around with the infusion temperatures and times.

Spring 2014 tea

The brewed tea has an incredible aroma of fresh flowers (lilac or geranium). There is also a note of creaminess in the scent. Very thick mouthfeel with strong floral notes (translated well from the aroma of the tea). Warm spice note- almost spicy but I could liken it to sweet nutmeg. I am utterly blown away by the complex flavours in this one- hard to believe it is not flavoured!

Really strong flavour at the 4 minute infusion. I would be tempted to try infusing for a shorter amount of time (3 minutes) because the flavour is so delightfully complex.
I’m getting a mixture of vegetal green with a distinct matcha note. There is a bit of oolong beany/grapefruit flavour aftertaste. Good full mouthfeel- the tea seems to coat your mouth.

Hold up extremely well to re-infusions.

Bold. Brisk. Slight bitterness- I might have waited too long to try this sample but I can tell that this is a really good tea. I might try the rest of my sample infusing at a lower temperature.

I usually do this for 3 min at 195F. But lowering the temperature could work well too. :)
